Potassium sorbate is a chemical and antifungal with the formula C6H7KO2.
potassium sorbate is highly soluble in water and has a PH of 8/4.
It is used as a preservative in the food industry. This preservative is not toxic in permissible amount and shows its best effect at PH less than 6 and at PH=4 the %86 solution is undifferentiated.
The effective antimicrobial concentration of sorbents in food is 0.05-0.3%. studies have shown that the target point is the retainer in the microbial cell, enzymes containing sulfhydryl, the oxidative phosphorylation system and the cell’s respiratory system.in addition to bacteria, sulfates also prevent the spores from sprouting and the growth of vegetative cells.
Potassium sorbate is used as a preservative in jams, cheeses, margarines, salts(especially pickles), and non-alcoholic beverages.
