Carboxi methyl cellulose ( CMC )
A whithe, odorless powder that dissolves rapidly in hot and cold water and is mainly used in cases where the target viscosity is controlled.it is soluble in water and insoluble in organic solvents. Reversible gel allows its viscosity to decrease with increasing temperature.
Functional properties:
Water retainer, oral enhancer, stabilizer, fat substitute, tissue stabilizer.
Applications:
Production of high quality ice cream, to resist melting, sweets, cakes, cookies, candy, all kind of juices and liquid drinks, dairy products, meat products, frozen foods, pasta, in the production of chips, in the production of various types mayonnaise and ketchup and ready-made soups, canned and fruit compotes.
